小网箱养殖大黄鱼挥发性风味物质检测与分析

摘    要:应用气相色谱-质谱联用仪(GC-MS)固相微萃取(SPME)法对小网箱养殖大黄鱼的挥发性成分进行检测与分析,结合感觉阈值,利用相对气味活度值确定鱼类的主体风味成分,并分析主要挥发性风味组分的气味特征及其生成途径。结果表明,小网箱养殖大黄鱼的主要风味成分由壬醛、辛醛、三甲胺、(E)-2-辛烯醛、己醛、戊酸乙酯、庚醛、(Z)-4-庚烯醛、(E,E)-2,4-庚二烯醛、1-辛烯-3-醇、(E)-2-己烯醛、癸醛、戊醛、(Z)-3-己烯-1-醇、2-戊基呋喃等15种化合物构成。

Abstract:The volatile compounds from Pseudosciaena crocea by headspace solid phase micro-extraction(HSSPME) and gas chromatography-mass spectrometry(GC-MS).The relative odor activity value(ROAV) in association with odor threshold was applied to confirm the key compounds of the fishes,and the flavor characteristic and the sources of the key volatile compounds were analyzed.The key odor compounds of Pseudosciaena crocea were found to be composed of Nonanal,caprylicaldehyde,trimethylamine,(E)-2-Octenal,Hexanal,Ethyl valerate,Heptanal,(Z)-4-Heptenal,(E,E)-2,4-Heptadienal,1-Octen-3-ol,(E)-2-Hexenal,capraldehyde,valeraldehyde,(Z)-3-hexene-1-ol,2-pentyl-furan 15 kinds of compounds formed.
