| Abstract: | Chinese traditional liquor inherited traditional brewing process,and at the same time,actively explored new technology in recent years.On the basis of liquor production mechanical automation technology development,koji making,brewing,blending and packaging technology principle and application status were summarized.The mechanical automation technology in liquor-making industry and development direction was expected as well. |
