摘    要:
近年来,中国传统白酒在继承传统酿造工艺的同时,积极开拓新技术,该文在总结白酒生产机械自动化技术发展历程的基础上,概述制曲、酿酒、勾兑、包装等方面的技术原理和研究应用现状,并展望机械自动化技术在白酒行业的应用前景和发展方向。

Abstract:
Chinese traditional liquor inherited traditional brewing process,and at the same time,actively explored new technology in recent years.On the basis of liquor production mechanical automation technology development,koji making,brewing,blending and packaging technology principle and application status were summarized.The mechanical automation technology in liquor-making industry and development direction was expected as well.
