ISOELECTRICFOCUSING AND IMMUNOCHEMICAL ANALYSIS OF GERMINATED BARLEY α-AMYLASES AFTER FREEZE-DRYING AND KILNING

Abstract:Isoelectricfocusing analysis showed that germinated barley contained three groups of α-amylase—α-amylase I a minor component and major components α-amylases II and III. During kilning there was a significant conversion of α-amylase III to α-amylase II. These two enzymes were shown to have immunochemical identity.
