摘    要:介绍了大蒜的功能成分、大蒜的食用方法及药用研究现状,进行了保存在不同温度下的蒜液对大肠杆菌的抑杀菌效果、对馒头的防腐保鲜试验,提出了今后大蒜产业的研究方向。

Abstract:The function components,eating methods and medical application status of the garlic were introduced.Experiments on strain inhibitation effects of garlic juice under different temperature and the preservation effect on the steamed bun were discussed.The research direction of garlic research in the future was put foward.
