摘    要:<食品分析>课程是食品学科的专业基础课,实践性很强,按操作步骤顺序进行课堂教学无助于学生掌握知识和技能,根据教育部关于加强本科教学的文件精神,加强实践环节的教学,对课堂教学、实验教学和考试方式进行改革势在必行.

Abstract:"Food Analysis" is one of the major fundamental courses for students in food science and is strongly practical. The traditional teaching methods emphasizing on operation procedures step by step will not be of help to students in their haveng a good grasp of due knowledge and technical skills. The Ministry of Education called for strengthening teaching quality at undergraduate stage. Therefore, a reform in classroom and laboratory teaching and the way of examination is inevitable.
