特色生态技术对浓香型白酒工艺中窖池设计与要求的研究

摘    要:通过几十年的建窖的经验和验证,最终确定一种浓香型白酒建窖防脱落的方法,采用窖池固定坡度固定公式:PDG=(SK-XK)/2/GD,得出PDG为池壁坡度固定值:0.15625,坡度9°左右,解决窖泥不易脱落和下垂,窖泥吸附保水性强,减少窖泥的用量12%,窖池的建窖优化,生态酿酒工艺优级率提高8%~12%,提高产酒率2%。

Abstract:Through decades of experience in the construction pit and validation,and ultimately determine a liquor off the anti-pit method of construction,the use of fixed-pit slope fixed formula: PDG =(SK-XK) / 2/GD,come to PDG wall slope for the fixed values: 0.15625,about 9° slope,the mud is not easy to fall off and solve the sagging pit,mud pit and strong adsorption of water retention,reduce the amount of 12% of the mud pit,pit construction pit optimization,ecological brewing process superior grade rate increased by 8%-12%,2% rate increase wine.
