Abstract:Aquatic products can enrich heavy metals, and the excessive content of heavy metals in aquatic products has become an unfavorable factor affecting the quality and safety of them. It not only lowered the confidence of consumer, but also seriously affected the healthy development of the aquatic industry economy. The toxic and side effects of heavy metals on human body are related to the degree of absorption and utilization of heavy metals in the body, and only the part absorbed by the intestine will be harmful. Therefore, in order to evaluate the harm of heavy metals and other toxic and harmful substances in food more scientifically, the methods of bio-accessibility and bioavailability could be studied. In this paper, several heavy metals in aquatic products, the relationship, research methods and application of bio-accessibility and bioavailability are summarized, which provided a theoretical basis for further scientific evaluation on the harm of heavy metals to human health and edible safety of aquatic products.
