摘 要: | 以山药和鲜牛奶经过乳酸发酵生产酸奶,并以该酸奶为主要原料,研制出一种风味独特且具有一定保健功能的新型活性乳酸菌冰淇淋制品,通过实验获得了最佳配方。产品口味独特、口感滑润,具有良好的膨胀率和抗融性。

Abstract: | The paper discusses the technology of ice cream with fermented yam yogurt,and determines the rea- sonable parameter of the technology.Then developed a unique style of a certain health and functional new reac- tive ice cream products.As the result of several groups of experiments,the best formula is obtained.This product has a special quality with particular and lubricate flavor,and a ideal overrun and anti-melting character. |
