甑桶醅层高度及结构设计对蒸馏效率及酒质的影响研究

摘    要:
探索浓香型白酒甑桶醅层高度及结构的设计对蒸馏效率及酒质的影响。研究表明,单位质量糟醅的蒸馏效率随醅层高度的增加逐渐升高。醅层高度相同时,小直径的甑桶蒸馏效率高于大直径甑桶;甑桶的高径比较大时有利于强化蒸馏,符合增己降乳的原则,可有效提高蒸馏效率与酒质。

Abstract:
The effects of the height of fermented grains layer and the structure design of steaming barrel on the distillation efficiency and the quality of Luzhou-flavor liquor were investigated.The results showed that as the height of fermented grains layer increased,distillation efficiency of the unit mass increased;for fermented grains layer of the same height,distillation efficiency of steaming bucket with smaller diameter was higher than that with larger diameter;it was good for distillation as the ratio of height to diameter was relatively large,which increased ethyl caproate and decreasd ethyl lactate and could effectively improve the distillation efficiency and liquor quality.
