| Abstract: | Fat oxidation will affect the quality of infant milk powder,and become a serious problem.The mechanism of fat oxidation and influential factors of oxidizing and anti-oxidizing in infant milk powder were analyzed in the article.The purpose of this article is to provide the basis for inhibiting fat oxidation and improving the quality of infant milk powder. |
