摘    要:婴幼儿奶粉中的脂肪氧化是一个较严重的质量问题.对婴幼儿奶粉中脂肪氧化机理、婴幼儿奶粉各种脂肪氧化和抗氧化影响因素进行概述,以期为抑制婴幼儿奶粉中脂肪氧化,提升婴幼儿奶粉质量提供依据.

Abstract:Fat oxidation will affect the quality of infant milk powder,and become a serious problem.The mechanism of fat oxidation and influential factors of oxidizing and anti-oxidizing in infant milk powder were analyzed in the article.The purpose of this article is to provide the basis for inhibiting fat oxidation and improving the quality of infant milk powder.
