摘    要:为建立进出口动物源性食品中志贺氏菌检验方法,从检测条件入手,通过增菌方式、分离培养基特异性和生化鉴定优化方法,以不同种类食品检测和不同实验室检测验证方法。确定的检测条件为志贺氏菌增菌液中(41.5±1)℃厌氧培养16~20h作为志贺氏菌检测的增菌方式;在分离上,同时使用MAC、XLD和HE三种平板,以提高志贺氏菌的检出率;选择了微量生化管和API20E对志贺氏菌和其他肠杆菌进行了生化鉴定和比较,效果明显。以此方法检测人工污染食品均检出志贺氏菌,各实验室也均检出志贺氏菌。

Optimization of shigellae inspection method for import and export animal-derived food

Abstract:In order to establish the inspection method of shigellae in animal - derived foods for import and export,the detection conditions were optimized in the enrichment culture,specificity of separation medium and biochemical identification,the method were verified by the detection for different kinds of food and different laboratories. This detection conditions confirmed showed that the best enrichment culture method of shigellae was(41. 5±1)℃ anaerobic training for 16 ~ 20h. In separation,MAC,XLD and HE were used at the same time to improve the detectable rate of shigellae infection. There were significant effects between the trace of biochemical tube and API20E in identification and comparison shigellae and other enterbacteriaceae. With the method,shigellae were all detected in artificially contaminated food by each laboratory.
