摘    要:预糊化淀粉是一种物理变性淀粉,具有冷水可溶、保水性强等特点,用途广泛。该文综述预糊化淀粉原料、制备方法和性质,并介绍预糊化淀粉在食品工业中应用,为食品用预糊化淀粉开发和应用提供依据。

Abstract:Pre–gelatinazed starch was produced by physical modification of nature starch.It was widely used for the properties of soluble in cold water and its ability of water keeping.This essay introduced the ingredients、preparation and properties of pre–gelatinazed starch,summarized the utilization of pre–gelatinazed starch in food industry.
