天然抗氧化植物化学物的研究进展

近年来大量研究发现,许多水果、蔬菜和中草药中富含具有抗氧化能力的植物化学物,它们能够保护机体,抵抗各种各样的疾病。因此,含有这些植物化学物的食品引起了消费者的关注,同时也成为科研工作者研究开发的热点。阐述近年来国内外对抗氧化植物化学物方面的一些研究进展,包括植物化学物抗氧化活性的评估、植物化学物的提取和分离。
