摘    要:在总结宣酒小窖酿造工艺,即小曲培菌糖化、大曲续糟、小窖发酵、双种香醅串蒸等典型工艺特点的基础上,阐述了宣酒既有大曲酒浓郁窖香,又有小曲酒的绵柔、醇和、甘甜,后味还略带酱香的典型风格。并从特殊的地理环境气候、独特的"江南小窖"酿造工艺、悠久的"江南小窖"传统古法酿造历史、独特的曲药制作工艺、江南小窖及窖泥制作等几方面探讨了江南"小窖绵柔"风格特点成因。

Abstract:Base on Xuanjiu small pit brewing technology,such as saccharification by Xiaoqu,fermented grains by Daqu,fermentation by small pits,cross-steaming by two kinds of flavoriing fermented grains ets.,the paper describ the characteristics of Xuanjiu,which intergranted Daqu properties(mellow aroma) and Xiaoqu properties(soft taste and enjoyable aftertaste),then combined Maotai properties.The formation of small pits soft-taste liquor is related to the special graphical environment,climate,the unique small pits technology,the liquor-making history,as well as berbs qu and pit mud making.
