麦芽粉碎原则

摘    要:麦芽粉碎主要是破开麦皮,暴露麦芽内部的胚乳并使麦芽粉碎成更多、更小的可溶物质以生产更多的麦汁。影响粉碎度控制的主要因素有麦芽质量、糖化方法和过滤方法;连续增湿粉碎的主要操作流程包括浸渍、粉碎、匀浆、泵出及冲洗;麦芽粉碎还应考虑粉碎方式、辊间距和滚筒的相对速度等。目前麦芽粉碎机正向大功率多辊式和湿式精细锤式粉碎机发展。

Abstract:The aims of malt crushing are to produce more wort through breaking bran coat, uncovering malt inner albumen, and making malt into soluble pieces. The factors influencing malt crushing degree mainly include malt quality, saccharifying methods, and filtration methods. The main operation processes of consecutive humidifying crushing cover steeping, crushing, homogenate, pumping out, and flushing. Crushing approaches, roller spacing interval, and the relative velocity of rolling drum should also be taken into consideration in malt crushing. At present, malt crusher is developing from high-power multiple rollers crusher to humidifying hammer mill.
