秘鲁鱿鱼和日本海鱿鱼营养成分分析与评价

摘    要:以秘鲁鱿鱼(Dosidicusgigas)和日本海鱿鱼(onychotellmisborealijaponicusokada)为原料,对其胴体的营养成分进行了分析比较与评价。研究表明,秘鲁鱿鱼和日本海鱿鱼都是低脂肪高蛋白食品,两者的蛋白质、脂肪、灰分含量均相近,水分含量前者显著高于后者(P〈0.05o两者的磷P、锌Zn、铜Cu含量没有显著性差别,日本海鱿鱼钙Ca的含量为(2.31‰)高于秘鲁鱿鱼(1.64%0o秘鲁鱿鱼的氨基酸总量、EEAA/ZAA均高于日本海鱿鱼,按照FAO/WHO建议的氨基酸评分标准模式,两者均属于优质蛋白质。两种鱿鱼含量最高的氨基酸均为谷氨酸,以AAS模式来看,虽然两种鱿鱼必须氨基酸指数不同,但都大于0.5,说明鱿鱼胴体营养丰富且符合人体对氨基酸的需求。秘鲁鱿鱼含有10种不饱和脂肪酸,日本海鱿鱼含有7种。与其他海产品相比较,鱿鱼的DHA含量较高,营养丰富,是具有较高开发前景的优质海产品。

Analysis and Evaluation of Nutritional Compositions of Dosidicus gigas and Onychoteuthis borealijaponicus okada

Abstract:Two species of squid (Dosidicus gigas and Onychoteuthis borealijaponicus okada ) carcass were studied and evaluated for their nutritional components. The moisture content of Dosidicus gigas was significantly higher than that of Onychoteuthis borealijaponicus okada (P〈0.05). Meanwhile the protein content, fat content, ash content of two kinds of squid carcass are similar. The contents of P, Zn, Cu in the carcass of Onychoteuthis borealijaponicus okada was similar to these in the carcass of Dosidicus gigas, and the content of Ca in the carcass of Onychoteuthis borealijaponicus okada was higher than that in the carcass of Dosidicus gigas. The content of total amino acid of Dosidicus gigasis was higher than that of Onychoteuthis borealijaponicus okada, as well as the content of ~E~. Both of the two kinds of squid carcass were of high-quality protein according to the ideal model recommend by FAO/WHO. Glu with the maximtun content was found in these two kinds of squid carcasses. According to AAS model; the amino acid indexes were more than 0.5. Eleven unsaturated fatty acids were found in Dosidicus g/gas and eight were found in Onychoteuthis borealijaponieus okada. In addition, squid carcass had abundant EPA and DHA compared with other marine products.
