摘    要:复合交联淀粉以其优异的性能在食品工业中得到了广泛应用,本文综述了交联淀粉、交联醚化淀粉、交联酯化淀粉和交联氧化淀粉等复合交联淀粉的特点及其在食品工业中的应用,重点讨论了目前的研究热点及其今后的发展趋势,探讨了复合交联变性淀粉在食品工业领域的发展前景。

Abstract:Complex crosslinked corn starch is widly used in food industry for excellent properties. The characteristics and applications in food industry of complex crosslinked corn starch, which include crosslinked starch, crosslinked etherified starch, crosslinked esterified starch and crosslinked oxidized starch, are reviewed. The research focus and development trend are discussed emphatically. The development prospects of complex crosslinked corn starch in the food industry are discussed.
