摘    要:对清香型白酒贮存过程的物质变化进行研究,认为清香型白酒贮存过程中,总酯逐渐升高,总酯逐渐下降,后期趋于平稳状态,低度酒比降度酒升、降幅度明显;高级醇有先上升后下降趋势。

Abstract:The compounds changes in the storage of Fen-flavor l iq uors were investigated and the results indicated that the contents of total acid s increased gradually and the contents of total esters decreased gradually and t he decrease trend tended to be stable in anaphase,low alcohol liquor had eviden tly higher decrease and increase range than alcohol-dropping liquor,and the co ntents of higher alcohols increased firstly and dropped latter.(Tran.by YUE Y ang)
