摘    要:本研究利用6种蛋白酶对棉籽蛋白进行单酶和双酶组合水解,测定水解过程中棉籽蛋白的水解度,同时对酶解产物的多肽得率进行了分析比较。结果表明,为了高效制备棉籽多肽,可先用Alacalase水解蛋白酶对棉籽蛋白进行水解,再利用Flavourzyme风味蛋白酶继续酶解,最终产物的水解度可达到36.58%,多肽得率达到71.32%,相比单独应用Alcalase水解蛋白酶,水解度提高了91.32%,多肽得率提高5.88%。

Abstract:6 proteases are used to single and double hydrolyze the cottonseed protein and determine hydrolysis degree of cottonseed protein,as well as analyze and compare the rate of peptides production.The results indicated that the optimal reaction systems were as follows:firstly,Alacalase hydrolysis,then Flavourzyme hydrolysis.Under the optimal system,the degree of hydrolysis 36.58%,cottonseed peptides with the yield of 71.32% were prepared.Hydrolysis degree of protein was increased to 36.5% and the rate of peptides production was 5.88% higher than that of the hydrolysis of cottonseed protein with only Alcalase.
