摘    要:益生菌是由乳杆菌、双歧杆菌、革兰氏阳性菌、酵母菌等经过特殊工艺复合而成的活体微生物制剂,是近年来新兴的高科技热门产品,风靡全世界。已在食品添加剂、动物添加剂和农业等领域得到广泛应用。本文对益生菌的概念、保健作用机理、国内外市场发展现状等,特别是对益生菌与酸奶的特殊关系进行了探讨。同时对消费者们和业内人士所关注的安全性、产品的生产、质量标准、审批程序等问题,做出了较为翔实可靠的描述。为益生菌进一步的研发、增强市场竞争力及相关企业产品的更新换代提供了依据。

Abstract:Probiotics is a living microbial ecological agent composed by lactobacillus, bifidobacterium, streptococcus sporolactobacillus and saccharomycetes through special technology. It has been one fashion product recently developed, and is broadly used in fields such as the food, animal additive and agriculture. This paper made a discussion on the concept of probiotics, health care mechanism, domestic and foreign market development status, and the special relationship between probiotics and the yogurt specially. Meantime, detailed discussions are made on questions concerning the product safety, the production quality specification, the approval procedure, which are closely concerned by both the consumers and the professionals. It gives a basis both for further product development on probiotics, and for how to strengthen market competition, a good reference for related enterprise in products upgrade.
