摘    要:基因工程技术给果蔬加工业带来了新的革命,本文综述了基因工程在果蔬加工诸多方面的应用,并对基因工程在果蔬加工中的应用前景作了展望。

Abstract:The genetic engineering technology has given a new revolution to fruit and vegetable processing. The widespread applications of genetic engineering in processing of fruit and vegetable in recent years were summarized in this paper,and the future development was finally prospected.
