响应面法优化枣渣可溶性膳食纤维提取工艺的研究

摘    要:在单因素实验的基础上,选取合适的因素及水平,通过响应面法优化了枣渣可溶性膳食纤维的提取工艺,得到的最佳条件为:纤维素酶添加量0.95%,酶解时间122.29min,酶解温度45.97℃,pH4.8,料液比1:20(g/mL),枣渣中可溶性膳食纤维得率为4.91703%.

Abstract:The appropriate factors and level were selected by the single factor experiment,the extraction process conditions by response surface optimization were substrate concentration 0.95%,time 122.29 min,temperature 45.97 ℃,pH 4.8,liquid ratio 1∶20(g/mL) and extraction rate of soluble dietary fiber from jujube residue was 4.917 03%.
