摘    要:按国家标准,采用EDTA法、凯氏定氮法、索氏抽提法、原子吸收光谱测定法(即AAS法)等方法,对南瓜子仁、无壳瓜子的水灰、灰分、蛋白质、粗脂肪、粗纤维、矿物质元素等营养成分进行了测定。测定结果显示:无壳瓜子和南瓜子仁的蛋白质、粗纤维含量没有显著差异;两种瓜子的脂肪含量较高,分别达到40.61%、37.10%;两种瓜子的Zn、Mg、Fe、Ca含量较高,且存在显著性差异(p〈0.05)。结果表明南瓜子仁和无壳瓜子具有一定营养价值,可用于提高人们膳食营养,为开发休闲食品提供科学依据和参考资料,并为出口产品的质量控制提供借鉴。

Abstract:Based on national standards,the nutritional components (water,ash,protein,crude fat,crude fiber and mineral elements)in pumpkin seeds and hulless ones were measured by the EDTA method,Kjeldahl method,Soxhlet extraction method and atomic absorption spectrometry (AAS).
