摘    要:本研究用HPLC法测定苋菜中的维生素C,色谱条件为Nova-pak C_(18)柱(3.9×300mm),0.1%草酸流动相,紫外检测器(254nm)。该方法不受植物色素及还原剂的影响,为测定有色蔬菜样品的理想方法。对61个苋菜品种进行取样测定,结果显示,苋菜维生素C的含量范围是34~81mg/100g鲜重,其中最高达81.37mg/100g鲜重。

Abstract:Determination of vitamin C in three colored Amaranth was studied by high-performance liquid chromatography (HPLC) with C18 column, 0.1% oxalic acid eluant and ultraviolet (UV) detector (254nm). The method is not influenced by plant pigments and reducers, so it is an ideal method when samples with pigments are determined. Vitamin C in 61 varieties of three colored Amaranth were determined. The range of vitamin C content was 34~81mg/100g fresh weight. The highest was 81. 37mg/100g fresh weight..
