油茶籽油加工过程中蛋白含量的变化研究

摘    要:以油茶籽油为原料,采用离子液体-盐离子双水相体系(ABS)对油中的微量蛋白进行提取,并考察离子液体和盐浓度对提取效率的影响,通过单因素实验确定茶油中微量蛋白提取的最佳组合浓度,并利用此方法进行油茶籽油精炼过程中蛋白含量的变化研究、压榨与浸提油中蛋白含量的差异研究。结果表明,采用200 g/L的Bmin]Cl+500 g/L的K2CO3为最佳的双水相体系萃取油中的微量蛋白,方法变异系数4.39%,加标回收率80.95±0.05%,油茶籽油精炼工艺中的过滤、脱胶、碱炼、脱色工序均能显著性降低油中蛋白含量,其中过滤工序影响最大,蛋白含量减少76.03%,压榨与浸提成品油茶籽油中蛋白含量差异极显著,在实际商品鉴定中具有极大的应用潜力。

Analysis of protein content from Camellia Oleifera seedoils during processing
Abstract:The trace proteins from Camellia oleifera seed oils were extracted by ionic liquid and salt based aqueous two-phase system (ABS).and the single factor experiments were used to determine the optimal ionic liquid and salt concentration for the extraction. Finally, the protein contents in the process of oil refining were analysed by above method. The results showed that 20% (W/V) Bmin]Cl+50% (W /v) K2CO3 was the best aqueous two-phase system for the extraction of trace proteins from oil. The coefficient of variation was 4.39% and the recovery yield was 80.95±0.05%. The oil refining process including filter, degumming, alkali refining, bleaching process can significantly reduce the protein content in the oil. Among them, the filtering process had the greatest effect, and the protein content was reduced by 76.03%. Moreover, there was a significant difference in protein content between the extracted and pressed camellia oleifera seed oil, which has great application potential in actual commodity appraisal.
