| 摘 要： | 花青苷是彩色马铃薯的特征性功能因子.文中综述了彩色马铃薯花青苷的提取、分离纯化、组分分析及生理活性等方面的研究进展,展望了彩色马铃薯花青苷今后的研究开发方向,对彩色马铃薯花青苷的研究和产业化开发具有一定参考价值.

| Abstract: | Anthocyanin is one of distinctive functional factors in pigmented potato.This article summarized the research progress of extraction,purification,composition analysis,physiological activities,research progress of the pigmented potato anthocyanin,and prospects the purple potato cyanine research and development directionin the future,which has a certain reference value to the research and industrialization development of pigmented potato anthocyanin. |
