高职烹饪工艺专业顶岗实习适应性与满意度研究

摘    要:顶岗实习是烹饪专业实践教学的重要组成部分.当前,随着烹饪工艺专业大学生生源结构的变化,学生顶岗实习质量受到了挑战.利用因子分析的方法,通过对高职烹饪工艺专业实习满意度调查,发现人际沟通对学生实习满意度的影响程度较高.学校应该加强对学生的非专业、非智力因素方面训练,推进顶岗实习质量链控制,强化学生职业规划,提高学生的专业荣誉感和成就感.

Abstract:Internship is an important part of professional practice for culinary science majors. With the current students recruited different from before, the quality of internship is faced with challenge. With factor analysis adopted, interpersonal communication counts more than other factors to decide students' degree of satisfaction of internship. Thus colleges should pay more attention to non-professional and non-intellectual training of students, and bring internship quality chains under control. Meanwhile career planning for students should be emphasized so as to improve their sense of honor and achievement.
