| Abstract: | A mixed juice beverage of papaya and passion fruit was mainly studied in the article. The optimum formula was obtained through orthogonal experiments by mixing papaya juice and passion fruit juice at a certain ratio. The beverage was featured by the fragrance of both the fruits. In addition, the stability of the beverage was studied by adding an appropriate amount of stabilizers to it. |
