“中国诗酒之乡”射洪酿酒工艺技术的演进及白酒量质摘酒技术起源——基于舍得酒业泰安作坊遗址考古出土文物的实证

舍得酒业泰安作坊,经过数百年传承,仍完整地留存着传统酿酒技艺的全过程。2007年,泰安作坊考古发掘出大量与酿酒相关的遗址和文物,从中可以窥见射洪酿酒工艺技术的演进历程以及中国传统蒸馏白酒的前世与今生,是中国白酒工业发展的缩影,是中国酒文化的活文物。其中,考古出土的两只明代翡翠品酒杯,是判定射洪蒸馏酒起源时间的重要依据,也是白酒蒸馏量质摘酒技术起源与发展的实物佐证。

After hundreds of years of inheritance,the Taian workshop of Shede Spirits still keeps the whole process of traditional wine making techniques iIntact.In 2007,a large number of sites and cultural relics related to wine making were excavated in Taian workshop,we can see the evolution of Shehong Baijiu making technology and the past and present of Chinese traditional distilled Baijiu,it is the epitome of the development of Chinese Baijiu industry,it is a living cultural relic of Chinese Baijiu culture.Among them,two Ming jadeite wine cups unearthed in archaeology,it is an important basis to determine the origin time of Shehong distilled Baijiu,it is also the physical evidence of the origin and development of Baijiu distilling technology.
