| 摘 要： | 大豆皂甙具有抗氧化、抗病毒、免疫调节、降脂减肥和抗凝血、抗血栓等特殊生理作用，而且是一类从天然植物中提取得到的化合物，符合当今食品、保健品行业追求天然、健康和功效的时尚潮流。利用大豆加工过程中排出的废水——乳清为原料，改进大豆皂甙的提取工艺，获得更多更高品质的提取物，并且充分利用大豆皂甙的特殊生理作用，应用于食品、医药、保健品、化妆品等行业，不但可以创造巨大的经济效益和有益于人民的身体健康，而且对减少污染物排放，保护环境起到重要的作用。

| Abstract: | yasaponin is extracted from soybean. It is effective on antioxidation, antiviral, immunity modulation and reducing weight, which meets the demand of food and dietary supplement industry. In this paper, high quality of soyasaponin was obtained by improving operation condition with soybean whey as material. According to its physiological activity, soyasaponin could be applied in food, medicineand cosmetic. |
