摘    要:
适配体因其高特异性、高亲和力、易于修饰和功能多样化等优点而被备受关注。荧光纳米材料因具有独特的光学特性,已成为一种极具应用潜力的标记材料。将核酸适配体的结合特异性和荧光纳米材料特有光学特性有机结合,开发选择性好、稳定性强、灵敏度高的荧光探针,基于该探针构建简单高效的检测技术已成为食品安全检测与分析领域的研究热点。本文概述了适配体荧光纳米探针的检测原理、分类,重点介绍了近几年该技术在有害化学物质和致病性微生物两类食品安全因子检测方面的应用,并对发展趋势进行了展望。

Abstract:
In recent years, the aptamer has attracted much attention due to their advantages including high specificity, high affinity, and easy to modify and functional. Additionally, fluorescent nanomaterials have been widely investigated as novel marking materials for their unique luminescent properties.A novel fluorescent probe with good selectivity, high stability and high sensitivity can be developed by combining the specific binding ability of aptamer with luminescent properties of fluorescent nanomaterials.Recently, the establishment of simple and efficient detection technology based on the above probe has become a hot spot in the field of food safety detection and analysis.In this review, the detection principle and classification of the probe were summed up.Its application in quantification of harmful chemical substances, and pathogenic microorganisms in food safety and detection were then emphatically introduced.Finally, the future development trends of this technique were prospected.
