天然菌类香菇烟用香原料的开发及应用

摘    要:以天然菌类香菇为原料,采用常规提取法、酶解法和梅拉德反应法开发新型烟用香料,进行了卷烟加香实验,结果表明:酶法所得香料使卷烟有特殊香韵,保润,提高烟气舒适度的作用;梅拉德反应所得香料使烟香明显增加,柔和烟气,增加甜润感和细腻性;常规提取法所得香料使烟香增加,余味改善。通过对香料挥发性成分的分析,常规提取法香料检测出挥发性成分23种,其主要香气成分为:糠醇(71.91μg/g)、棕榈酸乙酯(1.36μg/g)、亚油酸(23.61μg/g)、亚油酸乙酯(6.93μg/g);酶解法香料检测出50种,其主要香气成分为:1-(2-烯丙氧基-1-甲基-乙氧基)丙-2-醇(1.68μg/g)、正十六酸(35.6μg/g)、亚油酸(66.72μg/g)、10,13-十八碳二烯酸甲酯(1.02μg/g);梅拉德反应香料检测出38种,其主要香气成分为:2,5-二甲基吡嗪(1.67μg/g)、1-乙酰基-1H-咪唑(1.424μg/g)、1-(2-甲氧基丙氧基)丙-2-醇(1.57μg/g)、1-十六碳醇(1.356μg/g)、棕榈酸(107.627μg/g)、亚油酸(280.312μg/g)。

Abstract:Three special natural perfumes as cigarette flavor were produced by water distillation,enzyme treating and Maillard reaction from natural edible fungi:Lentinus edodes.Experiments with the perfumes were conducted.The results showed that special fragrant was endowed and smoking and moist quality of cigarette was significantly improved with the cigarette flavor by enzyme treating;both fragrant and sweet of cigarette were improved and smoking was soft with the cigarette flavor by Maillard reaction;fragrant was improved and awful aftertaste was effectively reduced with the cigarette flavor by water distillation.The volatile components in the perfumes were analyzed and 23,50 and 38 compounds were identified in the cigarette flavors by water distillation,enzyme treating and Maillard reaction respectivety.
