Abstract:
The paper introduces the principle of ultra-high pressure technology, the characteristic of food dealed with by ultra-high pressure technology, compare the discrimination between UHP and thermal sterilization the commonly used, the characteristic sterilization of UHP and situation of UHP technology in food industry.
