| 摘 要： | 番茄红素属于不具有环状结构的一种独特的类胡萝卜素，具有很强的抗氧化活性和多种生理活性，其单线态氧的活性是β-胡萝卜素的两倍。番茄红素具有抑制细胞增殖和扩散的作用，对各种癌症具有一定的预防和抑制效果。番茄红素又是一种着色范围广的食用色素。在欧洲和日本已批准为黄／红食用色素。番茄红素越来越多的应用在营养强化和食品着色领域，是一种保健性的食用色素。

| Abstract: | Lycopene is a kind of caroteniod with distinctive non-ring structure. It demonstrate strong antioxdative activity and multi-physilogical effects. Its efficiency of quenching the singlet oxygen is bouble of that of beta-carotene,lycopene shows effective in the inhibition of cell proliferation and propagation.It can diminish the ration of cancer occurrence.Lycopene is also a good colorant from the yellow to red coloring range,which was verified in Europe and Japan. Now lycopene is used widely as nutritional supplement and colorant. |
