多元醇对热处理大豆分离蛋白喷雾干燥的影响

摘    要:研究添加丙三醇、木糖醇和甘露醇不同相对分子质量的多元醇对热处理大豆分离蛋白喷雾干燥的影响。结果表明:加入多元醇会提高热处理大豆分离蛋白喷雾干燥样品的溶解性,且溶解性随多元醇相对分子质量增大而增加,以加入甘露醇的样品最为显著,相比热处理对照提高了25.12%;加入多元醇以后喷雾干燥样品可溶性部分能更大程度地维持其三级结构,且表面疏水性均比喷雾干燥前低;加入多元醇后其乳化性及凝胶性能都得到提高。

Abstract:The effects of different relative molecular weights polyols such as glycerol, xylitol and mannitol on the properties of heat-treated soybean protein isolate after spray-drying were studied. The results showed that the addition of polyol increased the solubility of heat-treated soybean protein isolate after spray-drying and the solubility improved with the increase of relative molecular weight of polyol. The sample with mannitol added had the highest increase of solubility after spray-drying, and the solubility increased by 25.12% compared with heat-treated control sample. After adding polyol, the soluble fraction of the spray-dried sample could maintain its tertiary structure to a greater degree, the surface hydrophobicity decreased, and its emulsifying ability and gel property were improved.
