新疆葡萄酒产区土壤、葡萄叶、葡萄果实和葡萄酒中矿物质元素含量及其相关性分析

摘    要:该研究以三个新疆葡萄酒产区(伊犁、和硕、石河子)的土壤、葡萄叶片、果实、葡萄酒为试验试材,应用原子吸收分光光度计分析对其中14种矿物质元素进行检测,并通过显著性分析、相关性分析、偏最小二乘法判别分析(PLS-DA)剖析这些矿物质元素在不同产区土壤、叶片、果实、葡萄酒中的含量及分布特点。结果表明,在同一产区土壤、果实、葡萄酒矿物质元素含量分布相似且具有相关性,在不同产区之间同种矿物质元素具有显著差异(P<0.05),三个产区土壤中Ca、Al、Fe含量最高,叶片、果实、葡萄酒中K、Mg、Ca含量最高。伊犁产区的土壤和果实矿物质元素间具有极显著相关性(P<0.01),果实中Mn元素与土壤中Fe、Mn元素呈现极显著负相关(P<0.01)。PLS-DA结果表明,土壤中矿物质基本可区分产地差异,葡萄叶、果实、果酒中的矿物质可以对三产区信息进行区分。

Abstract:Using soils, grape leaves, fruits and wines from three Xinjiang wine producing areas (Yili, Heshuo and Shihezi) as test materials, 14 mineral elements were detected by atomic absorption spectrophotometer, and the contents and distribution of these mineral elements in soils, leaves, fruits and wines of different producing areas were analyzed by significance analysis, correlation analysis and partial least squares-discriminant analysis (PLS-DA). The results showed that the distributions of mineral elements in soil, leaves, fruit and wine were similar and correlated in the same production area, and there were significant differences in the same mineral elements among different production areas (P<0.05). The contents of Ca, Al and Fe in soil of three producing areas was the highest, and the content of K, Mg and Ca in leaves, fruit and wine was the highest. There was a highly significant correlation between soil and fruit mineral elements in the Yili appellation (P<0.01), and Mn elements in fruit showed a negative highly significant correlation with Fe and Mn elements in soil (P<0.01). The three producing areas were discriminated and analyzed by PLS-DA: the minerals in soil could basically distinguish the origin differences, and the minerals in grape leaves, fruit and fruit wine could distinguish the information of the three producing areas.
