基于渗透汽化膜生产脱醇葡萄酒、葡萄烈酒的安全性分析

摘    要:为探究渗透汽化膜生产脱醇葡萄酒、葡萄烈酒的安全性情况,采用高效液相色谱等方法检测干红葡萄酒原酒、一级6 h、9 h、12 h停留液、二级6 h、9 h、12 h渗透液样品中氨基甲酸乙酯、赭曲霉毒素A、生物胺、甲醇、Fe3+、Cu2+含量。结果表明,在一级系统中,一级停留液氨基甲酸乙酯、赭曲霉毒素A、生物胺含量分别由3.31 μg/kg、0.33 μg/kg、10.86 μg/kg升至4.33 μg/kg、0.57 μg/kg、32.23 μg/kg,甲醇含量由138.47 mg/L下降至24.18 mg/L。在二级系统中,二级渗透液氨基甲酸乙酯、赭曲霉毒素A、生物胺、Fe3+、Cu2+含量分别下降至0.18 μg/kg、0.06 μg/kg、0.061 mg/L、0.38 mg/L、0.03 mg/L,甲醇含量升至486.75 mg/L,所有安全性指标均符合国内外相关标准,脱醇酒、葡萄烈酒样品具有良好的安全性。该研究结果为使用渗透汽化膜生产脱醇葡萄酒和葡萄烈酒的企业提供了相关理论依据。

Abstract:To explore the safety of pervaporation membrane production of dealcoholic wine and grape spirits, the contents of ethyl carbamate, ochratoxin A, biogenic amines, methanol, Fe3+ and Cu2+ in dry red wine base liquor, primary 6 h, 9 h, 12 h retention solution, and secondary 6 h, 9 h, 12 h penetrating solution were detected by HPLC. The results showed that in the primary system, the contents of ethyl carbamate, ochratoxin A and bioamine increased from 3.31 μg/kg, 0.33 μg/kg and 10.86 μg/kg to 4.33 μg/kg, 0.57 μg/kg and 32.23 μg/kg, respectively, and the content of methanol decreased from 138.47 mg/L to 24.18 mg/L. In the secondary system, the contents of ethyl carbamate, ochratoxin A, bioamine, Fe3+ and Cu2+ decreased to 0.18 μg/kg, 0.06 μg/kg, 0.061 mg/L, 0.38 mg/L and 0.03 mg/L, respectively, and the content of methanol increased to 486.75 mg/L. All the safety indexes were in line with the relevant standards at home and abroad. The samples of dealcoholic wine and grape spirits had good safety. It provided a theoretical basis for the production of dealcoholized wine and grape spirits by pervaporation membrane.
