摘    要:黑番茄作为农业新品种,具有很高的营养价值,开发利用潜力较大。通过介绍黑番茄营养价值、种植情况,浅析深加工技术存在的难题及对策,展望黑番茄深加工前景。以期更多同行研究、开发完善其深加工工艺,推动黑番茄产业的发展。

Abstract:Black tomato is a kind of new plant variety in agriculture, which has a high nutri- tional value and great development potential. Nutritional value, planting situation and processing way of the black tomato were introduced. The deep processing technology of existing problems and countermeasures were analyzed and its development prospect of deep processing was forecast in this paper, in order to make more people research and develop its deep processing technology and promote the development of black tomato industry.
