中国旅游饭店餐饮经营模式研究

摘    要:餐饮经营模式对旅游饭店的资源匹配、经营利润具有杠杆作用。不同经营模式决定不同工作策略。自主经营餐饮,要强化责任意识,仿真餐馆经营。结合经营餐饮,要有成熟的理念与运作。集团经营餐饮,要研究和落实中央厨房建设。品牌经营餐饮,要务实勤恳打造品牌。微缩经营餐饮,要便于集中精力从事客房经营。主题经营餐饮,要对主题文化进行维护与升华。

On the Operating Modes of Catering Businesses for Tourism of China

Abstract:The running modes of catering businesses play a crucial role in the distribution of catering resources and catering profits. Working strategies vary with the running modes. Sense of responsibility should be empha- sized in self-run business; joint operation mode should be guided by sophisticated ideology; group running should be focused on the development of a central kitchen;brand-oriented businesses should make great effort to establish its own brand;mini-running mode is most useful for the management of room service;theme cate- ring businesses should promote the culture of its them.
