苹果籽壳色素的体外抗氧化性及抑菌性研究

摘    要:以苹果籽壳为材料,对其进行色素的提取和纯化,研究其色素的体外抗氧化性能和抑菌性。结果表明,苹果籽壳粗提色素和纯化色素均对DPPH自由基、羟自由基以及超氧阴离子有较好的清除能力,两者的还原力较维生素C和BHT弱。苹果籽壳纯化色素对金黄色葡萄球菌,大肠杆菌和枯草芽孢杆菌具有一定的抑菌作用。抑菌顺序是大肠杆菌>金黄色葡萄球菌>枯草芽孢杆菌,且大肠杆菌的最低抑菌浓度为3%。综上,苹果籽壳色素具有一定的体外抗氧化性能和抑菌性,可用于食品、医药、日用化学品及化妆品等领域。

Abstract:Apple seed shell was used as raw material to extract and purify pigment,and the antioxidant and bacteriostatic properties of its pigment in vitro were studied.The results show that the pigment extracted and purified from apple seed shell has better scavenging ability to DPPH radicals,hydroxyl radicals and superoxide anions,and their reducing power is weaker than VC and BHT.The purified pigment of apple seed shell has certain bacteriostatic effect on Escherichia coli,Staphylococcus aureus and Bacillus subtilis.The order of bacteriostatic effect is Escherichia coli>Staphylococcus aureus>Bacillus subtilis,and the minimum bacteriostatic concentration of Escherichia coli is 3%.In summary,the apple seed shells pigment has certain antioxidant performance and antimicrobial activity,and can be used in food,medicine,daily chemical and cosmetics and other fields.
