摘    要:食品安全关系到全人类的生存和发展。食品分析检测是保证食品安全的重要途径。传统的食品安全监测体系主要依赖于专业的仪器设备和操作,昂贵且费时,寻求简单、快捷、大众型的食品安全检测方法具有重大的现实意义。纸基微流控芯片技术作为一种简便、高效、低成本的检测手段,可以实现从样品处理到检测的微型化、自动化、集成化及便携化,因而在食品安全快速检测领域展现出强大的发展活力。本文着重介绍了纸质微流控芯片技术在食品成分、农药残留、致病菌、重金属、食品添加剂等食品安全检测方面已取得的一系列重要进展,并展望了其在食品安全分析中的应用前景。

Abstract:Food safety is directly related to human survival and development. The analysis and detection of food is an important way to ensure food safety. The traditional food detection mainly relies on the professional instrumentation and operation, which is expensive and time consuming. So it has great practical significance to find a simple, fast and popular method for food detection. As a simple, efficient and low-cost detection method, paper based microfluidic chip technology can realize miniaturization, automation, integration and portability from sample processing to detection, and show strong development activity in the field of rapid detection. This paper reviewed a series of important advances in the field of food detection by paper based microfluidic chip technology, such as food ingredients, pesticide residues, heavy metals, pathogens and food additives, and prospected its application prospect in the field of food analysis.
