菊花绿茶复合保健饮料的研制

摘    要:以菊花、绿茶为主料,木糖醇、柠檬酸等为辅料,研制新型复合保健花茶饮料。通过单因素实验和正交试验确定菊花绿茶复合保健饮料最佳工艺条件为:菊花浸提液28%、绿茶浸提液40%、柠檬酸0.008%、木糖醇6%,用纯净水定容至100%。以此条件制得的产品色泽柔和、香气协调、酸甜适中、质地澄清、后味绵长。

Abstract:With chrysanthemum and green tea as main materials,xylitol and citric acid as auxiliary materials,a new compound health flower tea beverage was developed.The optimum formula of chrysanthemum green tea compound health beverage was screened by single factor test and orthogonal test based on sensory evaluation.The results showed that the optimum formula was:chrysanthemum extract solution of 28%,green tea extract solution of 40%,citric acid of 0.008%,xylitol of 6%,with pure water volume to 100%.The product has soft color,harmonious aroma,moderate sweetness and sour,uniform texture and long aftertaste.
