摘    要:近红外光谱技术作为一类新型的分析检测技术,在食品安全领域有着广阔的应用前景。综述了该技术在食品品种、产地和掺假真伪鉴别,致病菌、药物残留检测,污染物鉴别以及转基因食品鉴定等方面的应用研究进展,旨在为推动近红外光谱技术在食品安全检测方面的应用提供参考。

Abstract:As a new detection technology, near-infrared spectroscopy has broad application prospect in the field of food safety. The research progress of near-infrared spectroscopy in identification of food variety, origin, adulteration and authenticity, detection of pathogens and drug residues, identification of contaminant and identification of genetically modified food was reviewed in this article. The aim is to promote the application of near-infrared spectroscopy in food safety testing.
