利用氨基酸分析仪对橙汁中脯氨酸定量研究

摘    要:利用氨基酸分析仪对橙汁饮料中的游离脯氨酸进行测定,结果表明,橙汁饮料中含有一定量的脯氨酸,其含量差异较大,含量范围在0~919mg/L之间。分析果汁含量和脯氨酸含量之间的关系,结果表明,其含量的大小不能作为橙汁饮料中天然果汁含量多少的判定依据,要综合考虑其他的检测因子才能判定是否掺假。

Abstract:The content of free proline(Pro) in orange juice was tested by using Hitachi type L-8900 amino acid analysis analyzer.The results showed that the difference of Pro contents in different samples were quite large with ranges 0~919 mg/L.Analysis the relationship between the content of juice and Pro,showed that there is no relevance.So we cann’t decide the content of orange juice basis of the content of Pro,the other factor should be considered in order to decision an adulterated orange juice.
