VC及其磷酸酯的性质

摘    要:综述了维生素VC的理化性质、生理功能,说明维生素VC是动物、人体的生长、发育不可缺少的一种维生素。但由于其特殊的连二烯醇结构,使其在加工和使用过程中受到破坏,于是开发稳定性VC源势在必行。VC三聚磷酸酯(ASTP)即是适应这一要求于20世纪80年代开发的一种稳定VC源,研究了pH值对其溶解性的影响、介质对其稳定性的影响。并比较了维生素C与STP的抗氧化能力,结果表明ASTP较VC稳定得多。

Abstract:The physical and chemical properties ^ the physiological function of vitamin C were summarized.lt showed that vitamin C could not be shorted both for the develop and grow of animal and human. But for its special diol structure, it will be easily destroyed during the process and usage, so it is urgent to find stable source of vitamin C. Acorbyl - triphos-phate(ASTP) is a stable source that was developed in the 1980 to meet this need. Here what affects the PH will do to the solubility of ASTP, and what affects the medium will do to the stability of ASTP were studied. We have also compared the a-bility of resisting the oxidation of vitamin C and ascorbyl tri - phosphate, it showed that ASTP was much more stable than vitamin C.
