餐饮业食品添加剂滥用原因及管理对策研究

摘    要:针对餐饮业食品添加剂的使用特点和现状,文章深入分析了餐饮行业滥用食品添加剂的原因,包括企业内部不予重视、企业食品安全管理制度尚待完善、卫生监管流于形式等,并提出了相应的对策建议,包括加强宣传培训、建立企业食品添加剂使用管理制度、加强行政指导等,以形成一套由内而外、分层次、分重点的食品安全保障体系,促进餐饮业食品添加剂的有效管理。

Causes for Food Additives Abuse in the Catering Industry and Administration Strategies

Abstract:This paper analyzes the usage of food additives and its status quo in the catering industry. Causes for food additive abuse are also expounded, including lack of awareness in businesses, insufficient food safety regu-lations in businesses and poor government administration and inspection. Strategies to tackle these problems are also suggested: strengthening publicity and training, drawing up food additive usage regulations for businesses and reinforcing administrative guidance, etc. so as to install a multi-layered food safety guarantee system in-tegrating interior discipline and exterior inspection which will promote the efficient management of food addi-tives in the catering industry.
