摘    要:学校食堂是食物中毒的高发地,一些学校食堂的食品安全存在严重的问题.这与食品原料劣质、食堂管理混乱等因素有关.学校食堂必须从食品原料、食品加工、员工个人卫生、服务卫生、餐具消毒、器具消毒、监控网络安全、建立食堂HACCP系统等方面提出相应措施和对策,保障食堂食品安全.

Abstract:School canteen is a place with high-rate occurrences of food poisoning. Now it is known that there are serious problems with food safety caused by the poor quality of food materials and the management confusion of school canteens. Therefore, in order to guarantee food safety for the canteens a series of corresponding measures and countermeasures should be taken in such fields as food materials, food processing, staff personal hygiene, service hygiene, tableware sterilization, corresponding appliance sterilization, control of Net safety, establishment of canteen HACCP system and so on.
