Abstract:Vegetarian diet can be divided into three types: assorted vegetarian diet, meat-modelled vegetarian diet and purely vegetarian diet. As an attitude towards the human life and society, the development of vegetarian diet can not be separated from its social background. Here, on the basis of the analysis and study of four ancient cuisine books we have obtained a concrete idea about the development of the three types of vegetarian diet among the people in different periods of the Qing Dynasty.
