| 摘 要： | 结合在类胡萝卜素领域十余年的工作经验、以及积累研 究资料和相关文献，简要阐述了广泛分布在生物体中的类胡萝卜素的基本结构，比较全面地 综述了种类众多的类胡萝卜素光化学特性和紫外可见光吸 收光谱的基本特点，并讨论了有机溶剂、分子和亚分子结构的变化对上述基本特点的影响， 介绍了分析类胡萝卜素含量的方法和计算公式。

| Abstract: | Based on the relative books references in di fferent journals of a few countries as well as our knowledge of carotenoids obta ined during the past ten years of studies in this field, the basic molecular str ucture of carotenoids widespread in natural is briefly summarized, and the optic al properties and the UV-visible absorption spectrum of num erous carotenoids are reviewe d. After discussion of the influence of organic solvents, submolecular structure s and their isomers on the above optical parameters of carotenoids, the proper m ethods for carotenoids analysis, and the equations for quantification and calibr ation are suggested. |
