补风方式对商用厨房空气品质影响的探讨

摘    要:通过研究商用厨房环境的空气品质,阐明了补风对排风罩性能的影响。应用计算流体力学(CFD)专业软件Airpak2.0来模拟商用厨房的环境情况,并辅以实验验证。该模拟揭示了热羽从烹饪区上升到的排风罩的复杂流动情况。本文说明了补风和排风罩相结合的气幕式、罩前和罩后三种补风方式的流场的区别。

Abstract:By a study of indoor air quality in a simulated kitchen environment, the influence of makeup air on exhaust hood performance is illustrated. Computational fluid dynamics and professional software Airpak2.0 are used to simulate the condition in the public kitchen and to assist with experimental design. This simulation reveals a complex flow situation that can rise when the thermal plume from the cook top interacts with the exhaust hood. It shows the differences of airflow pattern among air curtain supply, front face supply and backwall supply integrated with the range hood.
